I know that some retailers or ecommerce companies will freeze any patches or changes to production environments through the holidays, to avoid breaking anything. Are you in that camp? If so, when does your freeze start?

True, but a downtime period during Black Friday can cost a lot, hence some companies doing infrastructure freezes.
